Pad Kra Pao

Ingredients

  • 1 lb ground pork
  • 1 egg
  • 1 lime
  • 3 slices cucumber
  • Thai basil
  • 2 shallots
  • 3 tbsp lard

Garlic Pepper Paste

  • 10 cloves garlic
  • 3-5 Thai chilies (adjust as needed)
  • 1 tbsp oil
  • 1/2 tsp salt

Sauce

  • 2 tbsp coconut aminos or soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp fish sauce
  • 1 tbsp brown sugar
  • 1 tbsp kecap manis

Instructions

  1. Prepare the garlic pepper paste and sauce first.
  2. Heat a wok over high heat, cook the garlic pepper paste and diced shallot with lard until fragrant
  3. Add the ground pork and stir-fry until all the juices are gone and the meat starts to caramelize.
  4. Add the sauce mixture.
  5. Stir-fry for another 2-3 minutes until well combined.
  6. Lastly, add the basil and turn off the heat. Continue stirring for another minute
  7. Serve it with rice, fried egg and cucumber slices.
