Shrimp Marinara Noodles 

Ingredients

  • 1 pack Gloryland Black Rice Noodles 
  • 8–9 peeled shrimp 
  • 1 shallot, finely chopped 
  • 3–4 garlic cloves, minced 
  • 1 cup marinara sauce 
  • 5 cherry tomatoes, halved 
  • Salt, to taste 
  • Water, for boiling 
  • Cooking oil 
  • Fresh parsley, for garnish 
  • 1 lemon wedge, for garnish 

Instructions

  1. Bring a pot of water to a boil and cook the black rice noodles for 2–3 minutes. Drain and set aside. 
  2. In a skillet, sear the shrimp until just cooked, then remove and set aside. 
  3. In the same skillet, sauté the shallot and garlic until fragrant. 
  4. Add the marinara sauce and cherry tomatoes, cooking for 3–4 minutes until the sauce reduces slightly. 
  5. Return the noodles to the skillet and toss to coat evenly in the sauce. 
  6. Add the shrimp back in, stir to combine, and season with salt to taste. 
  7. Garnish with fresh parsley and a lemon wedge before serving.
