Ingredients
- 1 pack Gloryland Black Rice Noodles
- 8–9 peeled shrimp
- 1 shallot, finely chopped
- 3–4 garlic cloves, minced
- 1 cup marinara sauce
- 5 cherry tomatoes, halved
- Salt, to taste
- Water, for boiling
- Cooking oil
- Fresh parsley, for garnish
- 1 lemon wedge, for garnish
Instructions
- Bring a pot of water to a boil and cook the black rice noodles for 2–3 minutes. Drain and set aside.
- In a skillet, sear the shrimp until just cooked, then remove and set aside.
- In the same skillet, sauté the shallot and garlic until fragrant.
- Add the marinara sauce and cherry tomatoes, cooking for 3–4 minutes until the sauce reduces slightly.
- Return the noodles to the skillet and toss to coat evenly in the sauce.
- Add the shrimp back in, stir to combine, and season with salt to taste.
- Garnish with fresh parsley and a lemon wedge before serving.
