Mango Float

Ingredients

  • 5 ripe mangoes 
  • 2 boxes Simple Mills Honey Cinnamon Seed & Nut Flour Sweet Thins 
  • 2 cups heavy cream 
  • 4 tbsp condensed milk (put more or less depends on how sweet you want) 

Instructions

  1. Dice 4 mangoes into cubes and thinly slice 1 mango for topping. 
  2. In a blender, pulse 1 cup of the crackers until finely crushed, set aside for decorating. 
  3. Using a stand mixer or hand mixer, whip the heavy cream and condensed milk together until stiff peaks form. 
  4. In a baking dish, start layering: begin with a layer of crackers, followed by whipped cream, then mango cubes. Repeat the layers until the dish is filled. Finish with a layer of whipped cream on top. 
  5. Cover and refrigerate overnight to allow the dessert to set. 
  6. The next day, decorate with the sliced mangoes and a sprinkle of crushed crackers before serving.
