Crispy Enoki Roll Air Fryer Version

Ingredients:

  • 2 sheets of rice paper
  • 2 bunches of enoki mushrooms
  • Cornstarch (for dusting)
  • Scallions (for garnish)
  • Salt (to taste)
  • Oil spray

Instructions:

  1. Lightly dip the rice paper sheets in lukewarm water and lay them flat on a clean surface.
  2. Place the enoki mushrooms in a vertical line across the center of each sheet.
  3. Once the rice paper softens, roll it tightly around the mushrooms like a spring roll.
  4. Slice the roll into bite-sized, sushi-like pieces and lightly dust both sides with cornstarch.
  5. Arrange the rolls in the air fryer basket, spray lightly with oil, and air fry at 385°F (195°C) for 15 minutes, or until golden and crisp.
  6. Let them cool for 1–2 minutes, sprinkle with a pinch of salt, garnish with scallions, and enjoy while warm!
