INGREDIENTS
- 1 Yukon Gold potato
- 1 carrot
- 3/4 cup all-purpose flour
- 1 teaspoon salt
- A pinch of black pepper
- 2 tablespoons water (adjust as needed)
- 1 whole egg
- Additional egg yolks (depending on how many you’re making)
- Garnish: toasted sesame seeds, chopped scallions, and red pepper flakes
INSTRUCTIONS
- Shred the potato and carrot, then mix with flour, salt, pepper, water, and the whole egg until well combined.
- Heat a bit of oil in a pan and add the mixture, shaping it into a round patty.
- Cook until the bottom is golden and crispy, then carefully flip to crisp the other side.
- Gently add an egg yolk to the center of the patty.
- Cover with a lid and continue cooking until the yolk is set, sunny side up.
- Remove from heat, garnish with sesame seeds, scallions, and red pepper flakes, and enjoy immediately!
