Ingredients
- 6 sheets rice paper
- 3 cups lukewarm water
- 1 tbsp crushed toasted peanuts (for garnish)
- 1 tbsp chopped cilantro (for garnish)
- Optional: 2 tbsp cooked ground pork
Peanut Sauce
- 2 tbsp minced garlic
- 1 tbsp chopped scallions
- 1 tbsp chili powder
- 1 tbsp chili flakes
- ½ tsp sugar
- ½ tsp salt
- 1 tbsp soy sauce
- 1 tbsp Chinese black vinegar
- 3 tbsp peanut butter
- ¼ cup water
- 2 tbsp hot oil
Instructions
- Stack two sheets of rice paper and dip them into lukewarm water until soft and pliable. Once rehydrated, lay them flat and cut into noodle-like strips. Repeat with the remaining sheets. Place all cut “noodles” back into lukewarm water to soak briefly, this prevents sticking and make sure the right chewy texture.
- In a bowl, combine garlic, scallions, chili powder, chili flakes, sugar, salt, soy sauce, vinegar, peanut butter, and water. Heat 2 tablespoons of oil until hot and carefully pour over the mixture. Stir until smooth and well combined.
- If using ground pork, stir-fry it with a pinch of salt and pepper until fully cooked.
- Drain the rice paper noodles and toss them in the prepared peanut sauce. Top with crushed peanuts, cilantro, and ground pork if using. Serve immediately and enjoy!
