Ingredients
Tacos
- 3 corn or flour tortillas
- 3 shrimp patties
- Mozzarella and cheddar cheese blend
- 2 ears of corn, grilled
Avocado Sauce
- 1 ripe avocado
- 6 garlic cloves
- ½ cup cilantro
- ¼ tsp cumin
- Juice of 1 lime
- ½ tsp salt
- ¼ cup water
Mango Salsa
- 1 ripe mango, diced
- 1 shallot, finely chopped
- 1 jalapeño, minced
- 1 red bell pepper, diced
- ½ cup cilantro, chopped
- 1 tsp salt
- Juice of ½ lime
Instructions
- Blend all avocado sauce ingredients until smooth and creamy. For the mango salsa, combine all ingredients in a bowl and mix well. Grill the corn, then slice the kernels off the cob.
- On a hot skillet or griddle, warm a tortilla for about 30 seconds. Place a shrimp patty on one side of the tortilla, then flip to cook the shrimp side for 2–3 minutes until fully cooked.
- Sprinkle a layer of cheese directly onto the skillet, then press the taco (shrimp side up) onto the cheese so it melts and crisps onto the tortilla. Cook until the cheese is golden and crispy.
- Remove the taco from the skillet. Spread a layer of avocado sauce inside, add grilled corn and mango salsa.
- Enjoy immediately while warm and crispy!
