Ingredients:
- 1 tomato, washed and frozen overnight
- 1 cucumber, washed and frozen overnight
- Extra virgin olive oil (EVOO), for drizzling
- Balsamic vinegar, for drizzling
- Fresh basil, for garnish
Instructions:
- Wash the tomato and cucumber thoroughly, then freeze them overnight.
- Once fully frozen, use a microplane grater to shave thin layers of tomato and cucumber, alternating them as you layer on a plate.
- Drizzle with balsamic vinegar and extra virgin olive oil.
- Garnish with fresh basil and serve immediately!
