Ingredients:
- 500ml heavy cream
- 125ml mascarpone cheese
- 1/4 cup condensed milk (adjust to taste)
- 2 ripe mangoes, diced
- 12 SkyFlakes crackers
Instructions:
- In a stand mixer or using a hand mixer, whip together the heavy cream, mascarpone, and condensed milk until stiff peaks form.
- Gently fold in the diced mangoes until evenly combined.
- Line a sheet pan with a layer of SkyFlakes crackers. Spread the mango cream mixture evenly over the crackers and smooth out the top with a spatula or scraper.
- Add another layer of crackers on top to form an ice cream sandwich.
- Cover and freeze overnight. Slice and enjoy the next day!
