Mango Ice Cream Sandwich

Ingredients:

  • 500ml heavy cream
  • 125ml mascarpone cheese
  • 1/4 cup condensed milk (adjust to taste)
  • 2 ripe mangoes, diced
  • 12 SkyFlakes crackers

Instructions:

  1. In a stand mixer or using a hand mixer, whip together the heavy cream, mascarpone, and condensed milk until stiff peaks form.
  2. Gently fold in the diced mangoes until evenly combined.
  3. Line a sheet pan with a layer of SkyFlakes crackers. Spread the mango cream mixture evenly over the crackers and smooth out the top with a spatula or scraper.
  4. Add another layer of crackers on top to form an ice cream sandwich.
  5. Cover and freeze overnight. Slice and enjoy the next day!
