Fried Enoki Mushrooms (Air Fryer Version)

Ingredients:

  • 2 bunches enoki mushrooms
  • 2 eggs
  • Salt and pepper, to taste
  • Cornstarch (for coating)
  • Olive oil spray
  • Scallions, thinly sliced (for garnish)

Instructions:

  1. Rinse the enoki mushrooms thoroughly and gently separate them into thin layers.
  2. In a bowl, whisk the eggs with a pinch of salt and pepper. Place cornstarch in a shallow dish for coating.
  3. Dip each cluster of enoki mushrooms into the egg mixture, then lightly coat with cornstarch. Shake off any excess.
  4. Arrange the coated mushrooms in the air fryer basket in a single layer then spray oil generously. Air fry at 400°F (200°C) for 15 minutes, or until golden and crispy.
  5. Garnish with sliced scallions and serve hot.
