Ingredients:
- 2 bunches enoki mushrooms
- 2 eggs
- Salt and pepper, to taste
- Cornstarch (for coating)
- Olive oil spray
- Scallions, thinly sliced (for garnish)
Instructions:
- Rinse the enoki mushrooms thoroughly and gently separate them into thin layers.
- In a bowl, whisk the eggs with a pinch of salt and pepper. Place cornstarch in a shallow dish for coating.
- Dip each cluster of enoki mushrooms into the egg mixture, then lightly coat with cornstarch. Shake off any excess.
- Arrange the coated mushrooms in the air fryer basket in a single layer then spray oil generously. Air fry at 400°F (200°C) for 15 minutes, or until golden and crispy.
- Garnish with sliced scallions and serve hot.
