Ingredients:
- 1 bunch enoki mushrooms
- 1 egg
- Salt and pepper, to taste
- 3 tbsp cooking oil
Instructions:
- Rinse the enoki mushrooms thoroughly and trim off the root ends.
- Gently separate the egg yolk from the egg white.
- In a cold pan (before adding oil), arrange the enoki mushrooms in a circular nest-like shape.
- Pour in the cooking oil generously around and over the mushrooms. Turn the heat to medium and cook until the mushrooms are golden and crispy.
- Carefully pour the egg white over the center of the mushrooms, then place the egg yolk on top. Season with salt and pepper to taste.
- Cook until the egg is set to your liking. Remove from the pan and serve immediately. Enjoy!
