Dumplings Caprese Salad 

Ingredients:

  • 1 ball fresh mozzarella
  • 2–3 slices tomato
  • 2–3 slices white peach
  • 2–3 slices nectarine
  • 2–3 slices apricot
  • 2–3 slices plum
  • 1–2 cherries, halved or whole
  • 8–10 dumplings
  • Olive oil and Parmesan cheese, for garnish

Pesto Sauce:

  • 1 cup fresh basil
  • ¼ cup extra virgin olive oil
  • ¼ cup nuts of choice
  • 4–5 garlic cloves
  • Salt and pepper, to taste

Instructions:

  1. Slice the fruits, tomato, and mozzarella into ¼-inch thick pieces.
  2. Boil the dumplings according to package instructions, then set aside.
  3. In a blender or food processor, blend all pesto ingredients until smooth.
  4. Spread a generous layer of pesto on the bottom of a serving plate.
  5. Arrange the sliced fruits, tomatoes, and mozzarella in a circular pattern around the edge.
  6. Place the dumplings in the center, then drizzle with olive oil and sprinkle with black pepper and Parmesan cheese. Serve fresh and enjoy!
