Ingredients:
- 1 ball fresh mozzarella
- 2–3 slices tomato
- 2–3 slices white peach
- 2–3 slices nectarine
- 2–3 slices apricot
- 2–3 slices plum
- 1–2 cherries, halved or whole
- 8–10 dumplings
- Olive oil and Parmesan cheese, for garnish
Pesto Sauce:
- 1 cup fresh basil
- ¼ cup extra virgin olive oil
- ¼ cup nuts of choice
- 4–5 garlic cloves
- Salt and pepper, to taste
Instructions:
- Slice the fruits, tomato, and mozzarella into ¼-inch thick pieces.
- Boil the dumplings according to package instructions, then set aside.
- In a blender or food processor, blend all pesto ingredients until smooth.
- Spread a generous layer of pesto on the bottom of a serving plate.
- Arrange the sliced fruits, tomatoes, and mozzarella in a circular pattern around the edge.
- Place the dumplings in the center, then drizzle with olive oil and sprinkle with black pepper and Parmesan cheese. Serve fresh and enjoy!
