Ingredients:
- 2 sheets of rice paper
- 2 sheets seaweeds
- 2 bunches of enoki mushrooms
- Cornstarch (for dusting)
- Scallions (for garnish)
- Salt (to taste)
- Oil spray
Instructions:
- Lightly dip the rice paper sheets in lukewarm water and lay them flat on a clean surface then put a sheet of seaweed over the rice paper.
- Place the enoki mushrooms in a vertical line across the center of each sheet.
- Once the rice paper softens, roll it tightly around the mushrooms like a spring roll.
- Slice the roll into bite-sized, sushi-like pieces and lightly dust both sides with cornstarch.
- Arrange the rolls in the air fryer basket, spray lightly with oil, and air fry at 385°F (195°C) for 15 minutes, or until golden and crisp.
- Let them cool for 1–2 minutes, sprinkle with a pinch of salt, garnish with scallions, and enjoy while warm!
