Rice Paper Mango Mochi

Ingredients

  • 12 sheets rice paper
  • 2 ripe mangoes
  • 2 tbsp potato starch (lightly toasted)
  • Lukewarm water (for soaking rice paper)

Instructions

  1. Stack 3 sheets of rice paper together and soak in lukewarm water until fully softened.
  2. Slice the mango vertically in half and remove the seed.
  3. Place one mango half onto the softened rice paper and wrap it tightly.
  4. Dust the wrapped mango with toasted potato starch to prevent sticking.
  5. Slice in half and serve.
