Ingredients
- 7 jalapeño peppers
- 1/2 cup cream cheese
- ¼ cup sour cream
- 1 cup roasted corn
- 4–5 slices bacon
- 2 shallots
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- A sprinkle of Tajín
- 3 tbsp BBQ sauce
- Oil spray
Instructions
- Slice the jalapeños in half lengthwise and remove the seeds.
- Prepare the filling by mixing cream cheese, sour cream, roasted corn, bacon, shallots, cheddar cheese, salt, and pepper together.
- Stuff the jalapeño halves with the filling.
- Brush each stuffed jalapeño generously with BBQ sauce.
- Spray the air fryer basket lightly with oil, then cook the jalapeños at 400°F (200°C) for 15 minutes, until cooked through and slightly charred.
