Ingredients
For Braised Mushrooms
- 2 large king oyster mushrooms
- 2 tbsp butter
- ½ cup minced garlic
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- ½ tbsp spicy bean paste (doubanjiang)
- ¼ tsp sugar
- 1 tsp cornstarch
- 1 cup chicken stock
- Red chili peppers, to taste
- Scallions, for garnish
- Cooking oil
For Crispy Rice
- 1 ½ cups cooked rice
- 2 tbsp butter
- ½ cup scallions, chopped
- 4–5 slices smoked salmon
- 2 tbsp crispy shallots
Instructions
- Wash and dry the mushrooms, then cut them into 1.5-inch pieces. Lightly score both sides in a crisscross pattern.
- Heat a little oil in a pan and sear the mushrooms on both sides until golden brown.
- Push the mushrooms to the side of the pan, then add butter and garlic. Sauté until fragrant.
- In a bowl, mix soy sauce, oyster sauce, spicy bean paste, sugar, cornstarch, and chicken stock. Pour the sauce into the pan and braise the mushrooms until tender and the liquid slightly reduces. Remove mushrooms and set aside, reserving the sauce.
- In a cast-iron pan, heat butter and press in the cooked rice to make a crispy golden crust.
- Assemble: top the crispy rice with scallions, smoked salmon, crispy shallots, and the braised mushrooms. Drizzle the remaining braising liquid over the top.
- Mix everything together before serving and enjoy!
