Mango Sago Sticky Rice

Ingredients:

  • 1 ripe mango, thinly sliced
  • 1 cup sago
  • 2 cups coconut milk (full-fat, unsweetened)
  • 1 tsp salt
  • 1 tbsp sugar
  • Toasted sesame seeds for garnish

Coconut Sauce:

  • 1 cup coconut milk (full-fat, unsweetened)
  • ¼ cup sugar (adjust to taste)
  • ¼ tsp salt
  • 1 tsp rice flour or cornstarch (for thickening)
  • 1 tbsp water (to mix with starch)

Instructions:

  1. Prepare the sago according to package instructions. Once cooked, mix with 1 cup coconut milk and set aside in a bowl to allow it to firm up slightly.
  2. In a small saucepan, combine 1 cup coconut milk, sugar, and salt. Heat over medium-low until it starts to simmer gently.
  3. In a small bowl, mix rice flour (or cornstarch) with 1 tbsp water to make a slurry. Stir the slurry into the coconut sauce and cook for 1–2 minutes until slightly thickened. Remove from heat and let it cool.
  4. Peel and slice the ripe mango.
  5. Arrange the sago onto a plate and add the mango slices on top or alongside. Drizzle with the coconut sauce and garnish with toasted sesame seeds.
