Ingredients
- 1 pack enoki mushrooms
- 1 pack noodles
- 2 tbsp gochujang (Korean chili paste)
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp honey (or sugar/maple syrup)
- 2 garlic cloves, minced
- 1 tsp grated ginger
- 2–3 tbsp water (to thin, as needed)
- 2 tbsp cooking oil
- 1 tsp toasted sesame seeds (optional, for garnish)
- 1 green onion, thinly sliced (for garnish)
Instructions:
- In a bowl, whisk together gochujang, soy sauce, sesame oil, honey, garlic, and ginger until smooth. Add water a little at a time until the sauce is thick but pourable.
- Heat oil in a pan over medium heat. Add enoki mushrooms and sear lightly until fragrant. Pour in the sauce and cook for 2–3 minutes, until the mushrooms are tender and well coated.
- Cook the noodles according to package instructions, then toss them with the sauce and mushrooms until evenly coated.
- Serve warm, garnished with sesame seeds and sliced green onion.
