Enoki Mushroom Noodles

Ingredients

  • 1 pack enoki mushrooms
  • 1 pack noodles
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey (or sugar/maple syrup)
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 2–3 tbsp water (to thin, as needed)
  • 2 tbsp cooking oil
  • 1 tsp toasted sesame seeds (optional, for garnish)
  • 1 green onion, thinly sliced (for garnish)

Instructions:

  1. In a bowl, whisk together gochujang, soy sauce, sesame oil, honey, garlic, and ginger until smooth. Add water a little at a time until the sauce is thick but pourable.
  2. Heat oil in a pan over medium heat. Add enoki mushrooms and sear lightly until fragrant. Pour in the sauce and cook for 2–3 minutes, until the mushrooms are tender and well coated.
  3. Cook the noodles according to package instructions, then toss them with the sauce and mushrooms until evenly coated.
  4. Serve warm, garnished with sesame seeds and sliced green onion.
