Ingredients
Potato Balls
- 3 Russet potatoes (ideal for frying)
- 1 tsp salt
- 3 tbsp rice flour (for extra crispiness)
- 3 tbsp glutinous rice flour
- Cooking spray or oil
Chili Sauce
- 2 tbsp garlic, diced
- 1 tbsp scallions, chopped
- 1 tbsp Thai chilies, chopped
- 1 tbsp toasted sesame seeds
- 1 tbsp chili powder
- 5 tbsp hot oil
- 1 tbsp Chin-Su chili sauce
- 1 tbsp fish sauce
Instructions
- Boil the potatoes in salted water until fork-tender, then mash until smooth.
- Mix in the rice flour, glutinous rice flour, and salt, kneading to form a smooth dough.
- Shape the dough into 1-inch balls with your hands.
- Place the potato balls in the air fryer, spray generously with oil, and cook at 400°F for 15 minutes, flipping and spraying halfway through.
- Remove and let rest for 2–3 minutes.
- Serve warm with the chili dipping sauce: combine garlic, scallions, Thai chilies, sesame seeds, chili powder, hot oil, Chin-Su chili sauce, and fish sauce.
