Rice Paper Crab Rolls

Ingredients

  • 10 imitation crab sticks
  • 20 seaweed strips
  • 20 small rice paper sheets
  • Oil spray
  • 2 cups water

Dipping Sauce

  • 2 tbsp mayonnaise
  • 2 tbsp sriracha
  • 1 tbsp tobiko
  • Squeeze of lemon juice

Instructions

  1. Cut the rice paper sheets into rectangles, about 1 x 2 inches.
  2. Slice the seaweed into thin 2-inch strips.
  3. Cut the imitation crab sticks into 1-inch pieces.
  4. Dip each piece of rice paper briefly in water to soften.
  5. Place a seaweed strip in the center of the rice paper, add a crab stick piece, then roll tightly.
  6. Preheat the air fryer to 385°F (195°C). Lightly spray the rolls with oil and cook for 15 minutes, flipping halfway through for even crispiness.
  7. While the rolls cook, prepare the dipping sauce by mixing mayonnaise, sriracha, tobiko, and a squeeze of lemon until well combined.
  8. Let the crispy rolls cool for a minute and enjoy immediately with the spicy tobiko mayo on the side.
