Golden Salmon Soup

Ingredients

  • 1 filet of salmon
  • 10–15 shrimp heads
  • 3 slices of ginger, julienned
  • 1 tbsp scallions
  • 2 tbsp cooking sake
  • 2 cups chicken stock
  • 1 cup water
  • ½ cup shimeji mushrooms
  • 2 bok choy
  • 2 red dates
  • 1 tbsp goji berries
  • 1 tbsp fish sauce
  • Salt, to taste
  • Squeeze of lemon juice
  • 2 tbsp cooking oil

Instructions

  1. Heat a pot over medium-high heat and add the cooking oil. Sauté the ginger and scallions until fragrant.
  2. Add the shrimp heads and stir-fry for 2–4 minutes, until they turn bright orange and aromatic.
  3. Pour in 1 cup of chicken stock and 1 cup of water. Simmer for 8–10 minutes to extract all the flavor from the shrimp heads.
  4. Meanwhile, sear the salmon until golden brown on all sides. (You can also use salmon cuts from your local sushi shop.)
  5. Once the broth is rich and flavorful, remove the shrimp heads. Add the remaining cup of chicken stock, then toss in the mushrooms, bok choy, red dates, goji berries, and seared salmon.
  6. Season the soup with salt and fish sauce to taste.
  7. Simmer for another 3–5 minutes, finish with a squeeze of lemon juice, and enjoy warm.
