Dumpling Wrapper Scallion Pancakes

Ingredients

  • 18 dumpling wrappers
  • 1 bunch scallions (green parts only)
  • ½ tsp salt
  • ½ tbsp five-spice powder
  • 1 tbsp sesame oil
  • 2 tbsp cooking oil

Instructions

  1. Finely chop the scallions and place them in a bowl. Season with salt, five-spice powder, and sesame oil. Mix well.
  2. Lay one dumpling wrapper flat, spread a thin layer of scallion mixture on top, then place another wrapper over it. Repeat once more,  you’ll have three layers total, with scallions between each.
  3. Gently press the stack with a rolling pin until even. Make a few light vertical cuts to help shape it into a circle more easily.
  4. Roll the layered stack into a spiral shape (like a cinnamon roll), then press it down and roll it flat again to form your pancake.
  5. Heat a bit of cooking oil in a nonstick pan over medium heat. Cook the pancake until both sides are golden brown and crispy.
  6. Enjoy the scallion pancake warm, straight from the pan!
