Ingredients
- 2 large potatoes
- 2 tbsp butter
- Lots of garlic
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sweet soy sauce
- 1/4 tsp sugar
- 1 tsp cornstarch
- 1 cup chicken stock
- Red chili peppers
- Fresh rosemary and thyme
Instructions
- Peel the potatoes and use a cookie cutter to shape them into neat cylinders. Lightly score both sides to help them absorb flavor.
- Heat oil in a skillet and sear the potatoes on both sides until deeply golden and crisp.
- Push the potatoes to one side of the pan and add the butter to the other. Once melted, add the garlic and red chili peppers, cooking for about 2 minutes until fragrant.
- Stir in the soy sauce, sweet soy sauce, oyster sauce, sugar, cornstarch, and chicken stock. Add the rosemary and thyme on top for aroma.
- Simmer over medium-low heat, basting occasionally, until the potatoes are tender and infused with the savory sauce.
