Rice Paper Croissant

Ingredients

  • 10 sheets of rice paper
  • 2 mini frozen eclairs
  • Granulated sugar to sprinkle
  • Egg Mixture
  • 3 eggs
  • 25g milk
  • 30g powdered sugar
  • 20g melted butter
  • 2.5g double-acting baking powder
  • 1 tsp vanilla extract

Matcha Option

  • 3 tbsp hot water
  • 1 tbsp matcha powder

Instructions

  • Prepare the egg mixture by combining all the listed ingredients. If you’d like to make a matcha version, mix the matcha powder with hot water and add it to the egg mixture after making the first croissant. The egg mixture will be enough for 2 croissants.
  • For each croissant, layer 5 sheets of rice paper on top of each other. Cut them into 3 parts as shown in the video.
  • Stack the cut rice papers and place a mini eclair in the center. Fold the rice paper to enclose the eclair.
  • Sprinkle granulated sugar on top and bake at 350°F (175°C) for 25 minutes.
