Coffee Biscoff Cheesecake

Ingredients

  • 1 tub Lifeway Farmer Cheese
  • 9 Biscoff cookies
  • ¼ cup 70% dark chocolate, melted
  • 1 tablespoon coconut oil
  • ¼ cup cappuccino-flavored kefir
  • 2 tablespoons brewed coffee (cooled)
  • 1 tablespoon honey

Instructions

  1. In a microwave-safe bowl, melt the dark chocolate with the coconut oil in 20–30 second intervals, stirring until smooth.
  2. In a separate bowl, combine the farmer cheese, cappuccino kefir, cooled coffee, and honey. Mix until creamy and fully incorporated.
  3. Gently fold in the Biscoff cookies, then drizzle the melted chocolate over the mixture. Lightly swirl to distribute the chocolate without overmixing.
  4. For a firmer, sliceable texture, refrigerate overnight. If you prefer the cookies to remain crunchy while the chocolate sets, chill for about 1 hour instead.
