- 1 tub Lifeway Farmer Cheese
- 9 Biscoff cookies
- ¼ cup 70% dark chocolate, melted
- 1 tablespoon coconut oil
- ¼ cup cappuccino-flavored kefir
- 2 tablespoons brewed coffee (cooled)
- 1 tablespoon honey
Instructions
- In a microwave-safe bowl, melt the dark chocolate with the coconut oil in 20–30 second intervals, stirring until smooth.
- In a separate bowl, combine the farmer cheese, cappuccino kefir, cooled coffee, and honey. Mix until creamy and fully incorporated.
- Gently fold in the Biscoff cookies, then drizzle the melted chocolate over the mixture. Lightly swirl to distribute the chocolate without overmixing.
- For a firmer, sliceable texture, refrigerate overnight. If you prefer the cookies to remain crunchy while the chocolate sets, chill for about 1 hour instead.
