Ingredients
- 1 sheet seaweed (nori)
- 2 rice paper sheets
- 3 lettuce leaves
- 1/2 carrot, julienned
- 1/2 cucumber, julienned
- 2 cooked chicken strips
- 1/2 avocado, sliced
- 1/2 tomato, sliced
- 1/2 cup cabbage, shredded
- 1/4 onion, thinly sliced
- Thousand island sauce, for spreading
- Toasted sesame seeds, for garnish
- Sesame oil, for brushing
Instructions
- Place the seaweed sheet on a flat surface. Lightly dip the rice paper sheets in water until just pliable, then place them underneath or slightly overlapping with the seaweed to form a sturdy base.
- Start with lettuce to help hold everything together. Layer on the carrot, cucumber, chicken strips, tomato, onion, avocado, and cabbage. Drizzle with thousand island sauce or sauce of your preference.
- Fold the sides and bottom of the rice paper inward, then roll everything up tightly together with the seaweed, similar to a burrito.
- Lightly brush the outside with sesame oil and sprinkle with toasted sesame seeds. Slice into 1/2-inch pieces and enjoy!
