Matcah Avocado Posset

Ingredients

  • 3 ripe avocados
  • 1/2 cup kefir
  • 1 tbsp honey
  • 2 tbsp matcha powder
  • 1 tsp salt
  • 1 cup heavy cream
  • 1/3 cup granulated sugar
  • 2 1/2 tbsp fresh lemon juice

Instructions

  1. In a blender, combine the avocados, kefir, honey, matcha powder, and salt. Blend until completely smooth and creamy. Set aside.
  2. In a small saucepan, heat the heavy cream and sugar over medium heat, stirring until the sugar fully dissolves. Bring to a gentle simmer and cook for about 3 minutes.
  3. Remove from heat and stir in the lemon juice. For an ultra-smooth texture, strain the mixture.
  4. Gently whisk the warm cream mixture into the avocado blend until fully incorporated and silky smooth.
  5. Pour the mixture into cleaned avocado shells (or small serving cups). Refrigerate for at least 3–4 hours, or until set.
  6. Lightly dust with matcha powder before serving. Enjoy chilled.
