Two Layer Onigirazu

Ingredients

  • 2 large nori sheets
  • 2½ rice paper sheets
  • 1 cup cooked rice
  • 1 tbsp furikake
  • 2 tbsp flying fish roe (tobiko)
  • ½ avocado, sliced
  • 3 tbsp tuna
  • 1 egg, cooked (fried or scrambled)
  • 5 slices cucumber
  • Cooking oil

Instructions

  1. Lightly soak two rice paper sheets in water until pliable. Slightly overlap them to form a larger base, then place the two nori sheets on top.
  2. Make one cut from the bottom edge toward the center, and another cut halfway across from the opposite side to create sections for folding (like a wrap hack style).
  3. Mix furikake and tobiko into the rice. Add the rice to one section. Layer avocado, tuna, egg, and cucumber into separate sections. Finish with a little more rice to help everything hold together.
  4. old each section over the next to form a compact sandwich. Use the remaining half sheet of rice paper to seal the open edge if needed.
  5. Heat a lightly oiled pan over medium heat. Pan-fry the sandwich until crispy and golden on both sides.
