Chicken Sushi Rolls

Ingredients

  • 1 sheet seaweed (nori)
  • 2 rice paper sheets
  • 1 cup rice
  • 1 tbsp furikake
  • 1/2 cucumber, julienned
  • 2 cooked Real Goods chicken strips
  • 1/2 avocado, sliced
  • Kewpie mayo and siracha
  • Toasted sesame seeds, for garnish
  • Sesame oil, for brushing

Instructions

  1. Place the seaweed sheet on a flat surface. Lightly dip the rice paper sheets in water until just pliable, then place them underneath or slightly overlapping with the seaweed to form a sturdy base.
  2. Start with furikake rice help hold everything together. Layer on the cucumber, chicken strips and avocado. Drizzle with kewpie mayo and siracha or sauce of your preference.
  3. Fold the sides and bottom of the rice paper inward, then roll everything up tightly together with the seaweed, similar to a burrito.
  4. Lightly brush the outside with sesame oil and sprinkle with toasted sesame seeds. Slice into 1/2-inch pieces and enjoy!
