Miso Enoki Spinach

Ingredients

  • 1 bunch enoki mushrooms
  • 1 bunch spinach
  • Water (for boiling)
  • 1/4 cup toasted sesame seeds
  • 1 tbsp white miso paste
  • 1 tbsp minced garlic
  • 1 tsp sugar
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1/2 tbsp vinegar
  • 1/4 cup hot water
  • Toasted sesame seeds (for garnish)

Instructions

  1. Bring a pot of water to a boil. Add the enoki mushrooms and cook until tender. In the same pot, blanch the spinach briefly until just wilted.
  2. Transfer both to an ice bath to stop the cooking, then squeeze out any excess water and set aside.
  3. In a bowl, combine the toasted sesame seeds, miso paste, garlic, sugar, soy sauce, mirin, vinegar, and hot water. Mix until smooth to create the miso sesame marinade.
  4. Add the spinach and enoki to the bowl and toss until evenly coated.
  5. Garnish with extra toasted sesame seeds and enjoy!
