Smashed Tater Tots Salad

Ingredients:

  • 2 cups frozen tater tots 
  • 1/2 cup Lifeway Farmer Cheese
  • 2 tbsp mayo 
  • 1 tbsp Dijon mustard 
  • 1/2 cup cucumber, diced 
  • 1/2 cup shallots, diced 
  • 1/4 cup pickles, diced 
  • 1/2 cup fresh parsley, chopped 
  • 1/2 cup fresh dill, chopped 
  • 1/2 cup fresh chives, chopped 
  • 1 tbsp garlic, minced 
  • A squeeze of fresh lemon juice 
  • 3–4 strips of bacon, cooked and crumbled 
  • Pickled red onions (preference) 

Instructions:

  1. Air-fry the tater tots at 365°F (185°C) for 2 minutes to slightly soften them. 
  2. While in the air fryer, gently smash each tot to flatten. 
  3. Return the smashed tots to the air fryer and cook for another 12 minutes, or until golden and crispy. 
  4. While the tots are crisping, combine the farmer cheese, mayo, Dijon mustard, cucumber, shallots, pickles, herbs, garlic, lemon juice, and crumbled bacon in a large bowl. Mix thoroughly. 
  5. Once the tater tots are ready, add them to the bowl and gently toss everything together until well combined. 
  6. Serve immediately and enjoy while the tots are still crispy!
