Ingredients:
- 2 cups frozen tater tots
- 1/2 cup Lifeway Farmer Cheese
- 2 tbsp mayo
- 1 tbsp Dijon mustard
- 1/2 cup cucumber, diced
- 1/2 cup shallots, diced
- 1/4 cup pickles, diced
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh dill, chopped
- 1/2 cup fresh chives, chopped
- 1 tbsp garlic, minced
- A squeeze of fresh lemon juice
- 3–4 strips of bacon, cooked and crumbled
- Pickled red onions (preference)
Instructions:
- Air-fry the tater tots at 365°F (185°C) for 2 minutes to slightly soften them.
- While in the air fryer, gently smash each tot to flatten.
- Return the smashed tots to the air fryer and cook for another 12 minutes, or until golden and crispy.
- While the tots are crisping, combine the farmer cheese, mayo, Dijon mustard, cucumber, shallots, pickles, herbs, garlic, lemon juice, and crumbled bacon in a large bowl. Mix thoroughly.
- Once the tater tots are ready, add them to the bowl and gently toss everything together until well combined.
- Serve immediately and enjoy while the tots are still crispy!
