Mango Matcha Bites

Ingredients

  • 2 mangoes, diced
  • 2 cups yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup white chocolate
  • 1 tbsp coconut oil
  • 2 tbsp matcha powder

Instructions

  1. In a bowl, mix together the yogurt, honey, vanilla extract, and diced mango until well combined.
  2. Scoop the mixture onto a lined baking sheet using a large spoon, shaping into cookie-like rounds. Freeze until fully solid (preferably overnight).
  3. For the matcha coating, melt the white chocolate and coconut oil together using a double boiler or microwave in 20-second intervals, stirring until smooth. Mix in the matcha powder until fully incorporated.
  4. Remove the frozen mango yogurt bites and dip each one into the matcha chocolate coating.
  5. Place them back on the tray and freeze for another 15 minutes, or until the coating is set.
