Ingredients
- 1 hamachi collar
- 3 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tbsp yuzu juice
- 1 tbsp ginger
- 1 tbsp garlic
- 1 tbsp lemongrass
- 3 kaffir lime leaves
- 2 Thai chilies
- 1 tbsp brown sugar
Instructions
- In a bowl, combine the fish sauce, soy sauce, yuzu juice, and brown sugar until well mixed.
- In a blender or mortar and pestle, grind the ginger, garlic, lemongrass, Thai chilies, and kaffir lime leaves into a paste.
- Add the aromatic paste into the sauce mixture and stir to combine.
- Add the hamachi collar, making sure it’s fully coated, then marinate overnight for best flavor.
- When ready to cook, preheat the oven broiler. Place the hamachi collar on a tray and broil for about 7 minutes per side, watching closely to ensure it’s nicely caramelized but not burnt.
