Rice Paper Mango Mochi

Ingredients:

  • 2 ripe mangoes (halved)
  • 3 rice paper sheets
  • 3 scoops vanilla ice cream
  • 6 tbsp sago
  • 3 tbsp mango puree
  • 2 tbsp potato starch (lightly toasted)
  • Lukewarm water (for soaking rice paper)

Instructions:

  1. Stack 3 rice paper sheets together and soak in lukewarm water until fully softened.
  2. Slice mangoes in half vertically and remove the seed.
  3. Place one mango half onto the softened rice paper, then add ice cream, sago, and mango puree. Wrap tightly to secure everything.
  4. Lightly dust the outside with toasted potato starch to prevent sticking.
  5. Slice in half and serve immediately.
