Ingredients:
- 2 ripe mangoes (halved)
- 3 rice paper sheets
- 3 scoops vanilla ice cream
- 6 tbsp sago
- 3 tbsp mango puree
- 2 tbsp potato starch (lightly toasted)
- Lukewarm water (for soaking rice paper)
Instructions:
- Stack 3 rice paper sheets together and soak in lukewarm water until fully softened.
- Slice mangoes in half vertically and remove the seed.
- Place one mango half onto the softened rice paper, then add ice cream, sago, and mango puree. Wrap tightly to secure everything.
- Lightly dust the outside with toasted potato starch to prevent sticking.
- Slice in half and serve immediately.
