Ingredients:
- 3 rice paper sheets
- 6 seaweed sheets
- 1 cup Liviva rice or sushi rice
- 2 eggs
- 3 slices Spam
- 3 slices cheddar cheese
- Cooking oil
Sauce:
- 2 tbsp soy sauce
- 2 tbsp sugar
- 2 tbsp mirin
- 2 tbsp water
Instructions:
- Cook the Liviva rice according to package instructions, or prepare sushi rice.
- In a small bowl, mix together soy sauce, sugar, mirin, and water to make the sauce. Set aside.
- Beat the eggs and cook into scrambled eggs or a thin omelet, then divide into 3 portions.
- Pan-fry the Spam slices until golden on both sides. Pour the sauce into the pan and let it simmer until slightly thickened and glazed over the Spam.
- Soften one rice paper sheet in warm water until pliable, then lay it flat on a clean surface.
- Place a sheet of seaweed in the center, followed by a scoop of rice, cheddar cheese, egg, and glazed Spam.
- Top with another small scoop of rice and a second seaweed sheet.
- Wrap tightly like a burrito, sealing in all the fillings.
- Pan-fry the wrapped musubi in a lightly oiled pan until crispy and golden on the outside. Serve warm and enjoy!
