Rice Paper PB&J Mochi

Ingredients:

  • 2 rice paper sheets
  • 2 tbsp peanut butter
  • 1/4 cup yogurt
  • 1 ripe banana
  • 2 tbsp fruit preserve/jelly
  • 1 tbsp roasted peanuts, crushed
  • Lukewarm water (for soaking rice paper)

Instructions:

  1. Soak rice paper in lukewarm water until softened, then place it into a small bowl to shape.
  2. Layer in peanut butter, banana, yogurt, fruit preserve, crushed roasted peanuts, and another layer of banana.
  3. Wrap tightly to secure all the fillings.
  4. Freeze for 10–15 minutes until slightly set, then enjoy.
