Spam and Egg Sushi Roll

Ingredients

  • 1 sheet seaweed (nori)
  • 2 rice papers
  • 1 cup instant rice
  • 2 tbsp furikake
  • 2 slices cheddar cheese
  • 2 eggs
  • 1 luncheon meat loaf (or slices), cut into strips
  • 1 tbsp cooking oil

Sauce

  • 1/4 cup ASSI kelp soy sauce
  • 2 tbsp bulgogi sauce

Instructions

  1. In a small bowl, mix kelp soy sauce and bulgogi sauce to make the glaze for the luncheon meat.
  2. Slice the luncheon meat into strips and pan-fry until golden brown. Add the sauce mixture and cook for another minute until caramelized.
  3. Scramble the eggs in the same pan until just set.
  4. Heat the instant rice in the microwave and mix with furikake.
  5. Lay down the seaweed sheet and overlap it with two rice papers to create a sturdy base.
  6. Spread the seasoned rice evenly, then layer on the luncheon meat, cheese, and scrambled eggs.
  7. Roll tightly, slice into bite-sized pieces, and enjoy.
