Watermelon Ice Cream

Ingredients

  • 1 ripe watermelon
  • 1 cup kefir (or substitute with 1 cup milk or ½ cup heavy cream for a richer texture)

Instructions

  1. Cut the watermelon in half. From one half, scoop out some of the center to create a shallow hollow in the middle.
  2. Wrap both halves tightly with plastic wrap. Place one half in the freezer and the other in the refrigerator.
  3. Freeze overnight, or until the watermelon is completely frozen and firm.
  4. When ready to serve, take the refrigerated half and use a melon baller or measuring spoon to scoop out small watermelon balls. Set aside.
  5. Remove the frozen half from the freezer and slowly pour in the kefir. Using a spoon, begin churning by gently scraping the frozen watermelon flesh into the kefir.
  6. Continue churning until the mixture starts to thicken and become creamy. If you’d like a richer, creamier texture, add a splash of heavy cream until it reaches your desired consistency.
  7. Serve immediately, topped with the fresh watermelon balls on the side.
