Ingredients
- 1 ripe watermelon
- 1 cup kefir (or substitute with 1 cup milk or ½ cup heavy cream for a richer texture)
Instructions
- Cut the watermelon in half. From one half, scoop out some of the center to create a shallow hollow in the middle.
- Wrap both halves tightly with plastic wrap. Place one half in the freezer and the other in the refrigerator.
- Freeze overnight, or until the watermelon is completely frozen and firm.
- When ready to serve, take the refrigerated half and use a melon baller or measuring spoon to scoop out small watermelon balls. Set aside.
- Remove the frozen half from the freezer and slowly pour in the kefir. Using a spoon, begin churning by gently scraping the frozen watermelon flesh into the kefir.
- Continue churning until the mixture starts to thicken and become creamy. If you’d like a richer, creamier texture, add a splash of heavy cream until it reaches your desired consistency.
- Serve immediately, topped with the fresh watermelon balls on the side.
