Frozen Mango Ice Cream

Ingredients:

  • 1 ripe mango
  • 1 cup kefir (or substitute with milk or heavy cream for a richer, creamier texture)

Instructions:

  1. Cut the mango in half and remove the seed.
  2. Wrap both mango halves tightly with plastic wrap. Place one half in the freezer and the other half in the refrigerator.
  3. Freeze the mango overnight, or until the frozen half is completely firm.
  4. When ready to serve, take the refrigerated mango half and cut it into small cubes. Set aside for topping.
  5. Remove the frozen mango half from the freezer and slowly pour in the kefir. Using a spoon, begin churning by scraping the frozen mango flesh into the kefir until it starts to break down and blend together.
  6. Continue churning until the mixture becomes thick, smooth, and creamy. For an extra rich and creamy texture, add a splash of heavy cream until it reaches your desired consistency.
  7. Serve immediately, topped with the fresh mango cubes on the side.
