Ingredients:
- 1 ripe mango
- 1 cup kefir (or substitute with milk or heavy cream for a richer, creamier texture)
Instructions:
- Cut the mango in half and remove the seed.
- Wrap both mango halves tightly with plastic wrap. Place one half in the freezer and the other half in the refrigerator.
- Freeze the mango overnight, or until the frozen half is completely firm.
- When ready to serve, take the refrigerated mango half and cut it into small cubes. Set aside for topping.
- Remove the frozen mango half from the freezer and slowly pour in the kefir. Using a spoon, begin churning by scraping the frozen mango flesh into the kefir until it starts to break down and blend together.
- Continue churning until the mixture becomes thick, smooth, and creamy. For an extra rich and creamy texture, add a splash of heavy cream until it reaches your desired consistency.
- Serve immediately, topped with the fresh mango cubes on the side.
