Frozen Peach Ice Cream

Ingredients:

  • 1 ripe yellow peach
  • 1 ripe white peach
  • 8 tbsp kefir (or substitute with milk or heavy cream for a creamier texture)

Ingredients:

  1. Cut both peaches in half and remove the pits.
  2. Wrap one half of each peach tightly with plastic wrap and place them in the freezer overnight, or until completely frozen. Store the remaining peach halves in the refrigerator.
  3. When ready to serve, dice the chilled peach halves into small cubes and set aside for topping.
  4. Remove the frozen peach halves from the freezer and slowly pour in the kefir. Using a spoon, begin churning by gently scraping the frozen peach flesh into the kefir as it starts to break down.
  5. Continue churning until the mixture becomes thick, creamy, and smooth. For an even richer texture, add a splash of heavy cream until it reaches your desired consistency.
  6. Serve immediately and top with the fresh peach cubes for extra texture and sweetness.
