Ingredients:
- 1 ripe mango
- 3 tbsp kefir, milk, or heavy cream
- 1 tsp ceremonial-grade matcha powder
Instructions:
- Cut the mango in half and remove the pit.
- Wrap both mango halves tightly with plastic wrap. Place one half in the freezer and the other half in the refrigerator.
- Freeze the mango overnight, or until completely firm.
- When ready to serve, dice the chilled mango half into small cubes and set aside for topping.
- Whisk together the matcha powder and your choice of kefir, milk, or heavy cream until smooth.
- Remove the frozen mango half from the freezer and slowly pour the matcha mixture over it. Using a spoon, gently scrape and churn the frozen mango flesh into the liquid as it softens.
- Continue churning until the mixture becomes thick, smooth, and creamy, with a Ice cream consistency.
- Serve immediately and top with the fresh mango cubes for extra sweetness and texture.
