Ingredients:
- 2 ears of corn, kernels removed
- 1 cup edamame
- Cooking oil, for frying
- Chinsu Sweet & Sour Dipping Sauce, for serving
Batter:
- 1 cup all-purpose flour
- ¼ cup cornstarch
- ½ tsp baking powder
- ½ tsp salt
- ¾–1 cup ice-cold sparkling water
- 1 egg yolk (optional, for a richer, golden crust)
Instructions:
- Prepare the batter: In a large bowl, combine the flour, cornstarch, baking powder, and salt.
- Add the corn and edamame to the dry mixture and toss to coat.
- In a separate bowl, lightly whisk the egg yolk with ¾ cup ice-cold sparkling water, if using.
- Pour the sparkling water mixture into the corn and edamame mixture. Gently stir until everything is just combined. Do not overmix—a few small lumps are perfectly fine.
- If the batter feels too thick, gradually add more sparkling water until you have a light batter that coats the vegetables without being too heavy.
- Heat oil to 350–375°F (175–190°C). Scoop portions of the mixture into the hot oil and fry until golden brown and shatteringly crisp.
- Transfer the fritters to a wire rack to drain and stay crispy. Avoid placing them directly on paper towels, which can trap steam and soften the crust.
- Serve immediately with Chinsu Sweet & Sour Dipping Sauce for dipping.
