Rice Cooker Bibimbap with Mackerel

Ingredients

  • 1 cup rice
  • 1 Jeju mackerel, thawed
  • 1 tbsp butter
  • 1 egg, beaten
  • 2 cups water
  • ¼ cup cucumber, thinly sliced
  • ¼ cup carrots, thinly sliced
  • ¼ cup enoki mushrooms
  • ¼ cup bean sprouts
  • 3 imitation crab sticks, sliced
  • 3 shrimp
  • ½ can tuna, drained
  • ½ bunch spinach
  • 1 fried egg, for serving
  • ¼ cup scallions, sliced
  • ¼ cup kimchi
  • 3 tbsp gochujang

Instructions:

  1. Prepare the rice: Rinse the rice thoroughly until the water runs mostly clear. Add the beaten egg and mix until the rice is evenly coated.
  2. Transfer the rice to a rice cooker and add the water. Stir gently to combine.
  3. Layer the cucumber, carrots, enoki mushrooms, bean sprouts, imitation crab, shrimp, and tuna evenly over the rice. Do not stir.
  4. Cook according to your rice cooker’s standard white rice setting.
  5. While the rice cooks, heat the butter in a pan and sear the thawed mackerel until golden and crispy on the outside and cooked through. Set aside.
  6. Once the rice is finished, add the spinach on top, close the lid, and let it sit for 3–5 minutes. The residual heat will gently wilt the spinach.
  7. Add the gochujang and gently fluff and mix everything together. If the water ratio is just right, the bottom should develop a delicious layer of lightly crispy, scorched rice.
  8. Top with the crispy seared mackerel, fried egg, scallions, and kimchi.
  9. Serve hot and enjoy!
