Cheesy Rice Paper Croissant

Ingredients

  • 10 sheets rice paper
  • Garlic & Herb Goat Cheese — Celebrity Goat
  • Cranberry Cinnamon Goat Cheese — Celebrity Goat
  • ½ mango, sliced or diced
  • Fresh parsley
  • Granulated sugar, for sprinkling

Egg Mixture

  • 3 eggs
  • 25g milk
  • 30g powdered sugar
  • 20g melted butter
  • 2.5g double-acting baking powder
  • 1 tsp vanilla extract

Matcha Option

  • 3 tbsp hot water
  • 1 tbsp matcha powder

Instructions

  1. Make the egg mixture: In a bowl, whisk together the eggs, milk, powdered sugar, melted butter, baking powder, and vanilla extract until smooth. The mixture will be enough for 2 croissants.
  2. Make the matcha version: Prepare the first croissant using the original egg mixture. For the second croissant, whisk the matcha powder with hot water until smooth, then mix it into the remaining egg mixture.
  3. Prepare the rice paper: For each croissant, stack 5 sheets of rice paper on top of one another. Cut the stack into 3 sections, following the shape shown in the video.
  4. Add the filling: Stack the cut rice paper pieces, then place the goat cheese in the center. For the matcha version, add the mango as well.
  5. Shape: Fold the rice paper around the filling to create a croissant/eclair shape, making sure the filling is enclosed.
  6. Add the egg mixture: Dip or coat the rice paper pastry with the egg mixture, making sure it’s evenly covered.
  7. Bake: Place on a lined baking sheet, sprinkle with granulated sugar, and bake at 350°F (175°C) for about 25 minutes, or until golden and crisp.
  8. Finish: Let cool slightly, then garnish with fresh parsley if desired. Enjoy warm!
