Matcha Watermelon Ice Cream

Ingredients

  • 1 ripe watermelon
  • 40g milk or heavy cream
  • 4g matcha powder

Instructions

  1. Cut the watermelon in half. Scoop out some of the flesh from the center of one half to create a shallow hollow.
  2. Wrap both watermelon halves tightly with plastic wrap. Place one half in the freezer and the other in the refrigerator.
  3. Freeze the watermelon overnight, or until the flesh is completely frozen and firm.
  4. When ready to serve, use a melon baller or measuring spoon to scoop small watermelon balls from the refrigerated half. Set aside.
  5. Make the matcha milk by whisking the matcha powder with the milk until smooth and well incorporated.
  6. Remove the frozen watermelon half from the freezer and slowly pour in the matcha milk. Using a spoon, gently scrape and churn the frozen watermelon flesh into the matcha mixture.
  7. Continue scraping and churning until the mixture becomes thick and creamy. For a richer texture, add a splash of heavy cream and continue mixing until you reach your desired consistency.
  8. Serve immediately and top with the fresh watermelon balls.
