Ingredients:
- 2 chicken breasts or thighs
- 1 cup corn flakes
- 1 tsp paprika
- 1 tbsp grated Parmesan
- 1 tsp onion powder
- ½ tsp salt
- 1 egg
- Sue Bee Hot honey, for drizzling
- Red pepper flakes, for garnish
- Fresh parsley, for garnish
Instructions:
- Flatten the chicken: Place the chicken between two pieces of parchment paper and gently pound it to an even thickness using a meat mallet or chicken press.
- Make the corn flake coating: Add the corn flakes, paprika, Parmesan, onion powder, and salt to a blender or food processor. Pulse a few times until the corn flakes are mostly crushed, but still have some larger pieces for extra crunch.
- Prepare the dredge: Whisk the egg in a shallow bowl. Place the corn flake mixture in a separate bowl.
- Coat the chicken: Dip each piece of chicken into the beaten egg, making sure it’s fully coated, then press it into the corn flake mixture until evenly covered.
- Air fry: Place the chicken in the air fryer and cook at 380°F for 10–15 minutes, flipping halfway through, until golden and cooked through. Cooking time may vary depending on the thickness of the chicken.
- Finish: Drizzle generously with hot honey, then sprinkle with red pepper flakes and fresh parsley.
