Ingredients:
- 10–11 shrimp, peeled and deveined
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1/4 tsp white pepper powder
- 2 tbsp scallions, finely chopped
- 1 tsp grated ginger
- 1 tsp cornstarch
- 8 salted egg yolks
- 18–20 dumpling wrappers
- Water, for boiling
Instructions:
- Make the filling: Add the shrimp to a food processor or blender and pulse until finely minced. Transfer to a bowl and add the sesame oil, soy sauce, white pepper, scallions, ginger, cornstarch, and salted egg yolks. Mix until everything is well combined.
- Fill the wrappers: Place about 1 tablespoon of the shrimp mixture in the center of a dumpling wrapper. Gather the edges around the filling and twist gently to seal, creating a round, candy-like shape. The exact shape doesn’t matter as long as the dumpling is securely sealed.
- Shape the dumplings: Lightly grease a mooncake mold if needed. Place each dumpling into the mold and gently press it down to create the mooncake-inspired shape.
- Boil: Bring a pot of water to a boil. Carefully add the dumplings and cook until they float to the surface and are cooked through.
- Serve: Remove the dumplings and enjoy them fresh while they’re warm!
