Ingredients
- 3 eggs
- Lukewarm water — 1.5× the weight of the eggs
- ½ lb ground pork
- 1 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tbsp minced garlic
- 1 tbsp doubanjiang
- 1 tsp Sichuan pepper powder
- 1 tbsp Shaoxing wine
- 1 tbsp chopped scallions
Instructions
- Prepare the eggs: Crack the eggs into a bowl and whisk until smooth. Weigh the eggs, then add lukewarm water equal to 1.5× the weight of the eggs. Add 1 tbsp fish sauce and whisk until well combined.
- Strain the egg mixture: Pour the mixture through a fine-mesh sieve to remove any bubbles and create a smooth, silky texture.
- Steam the eggs: Pour the egg mixture into a heatproof dish and steam over medium heat for 10 minutes. Turn off the heat and let it rest, covered, for another 5 minutes.
- Make the pork topping: While the eggs are steaming, heat a little oil in a pan over medium-high heat. Sauté the garlic until fragrant, then add the ground pork and cook until browned. Add the soy sauce, doubanjiang, Sichuan pepper powder, and Shaoxing wine. Stir-fry until the pork is fully cooked and the sauce is fragrant and well combined.
- Finish and serve: Spoon the spicy pork over the steamed egg and finish with chopped scallions. Serve warm with a bowl of rice and enjoy!
